In that spirit, try this eighteenth century recipe for ketchup, slightly updated for modern use.
One familiar ingredient is missing. Do you know what it is?
Put a pint of white wine vinegar into a wide-mouthed bottle.
Peel and bruise ten to twelve shallot cloves and add to bottle.
Boil ½ a cup of white wine.
Add twelve to fourteen washed and shredded anchovies.
Dissolve the anchovies in the wine. Cool and add to bottle.
Place another ½ cup of white wine into the saucepan.
Add a pinch of mace, sliced ginger, a few cloves, and a spoonful of whole pepper, slightly bruised. Boil for several minutes.
Then add almost a whole nutmeg, some lemon peel and two to three spoonful’s of horseradish.
Seal the jar and refrigerate. Shake before using.
