In this BryonySeries novel, John Simons eats silver cake, rich in mace and citron, baked by the owner of a small farm, where he works the summer of his eighteenth birthday.

Here is a very old, basic recipe for silver cake, without the citron and mace in the version served to John.

1 pound white sugar

1/2 pound butter

10 egg whites

3/4 pound white flower

Flavoring of choice

Cream sugar and butter; add egg whites and then add flour. 

Pour into a greased pan and bake in a quick oven (approximately 37 degrees) until toothpick stuck in center of cake comes out clean.

Ice or frost if desired.
