Here is a 19th century recipe for omelets that you can try at home. This recipe is very similar to the one Sue made.

Separate six eggs. Beat the whites beaten to a stiff froth and beat the yolks well.

Melt a tablespoon of butter and add it to a tea cup of warm milk.

Add a little of the mil to a tablespoon of flour to make a wet paste. Stir it into the milk.

Add 1 teaspoon of salt and a dash of pepper. Mi into the yolks and then fold in the white.

Cook on a greased flat pan until the bottom is browned. Flip and cook the other side.
