So today, we are sharing our cornbread recipe from this BryonySeries cookbook.

Vegetable oil (enough to coat an 8-inch iron skillet)

1 teaspoon bacon grease (approximately)

2 cups self –rising cornmeal (plus more to dust skillet)

1 to 1 ½ cups buttermilk

1 egg

Pinch salt

A little sugar (optional)

 

Preheat oven to 425 degrees. Place an 8-inch skillet over medium high heat. Coat the bottom of the pan with vegetable oil. Add bacon grease. While skillet is heating, mix all ingredients until combined. Coat skillet with light sprinkle of cornmeal. Pour cornmeal mixture into skillet. Place skillet into preheated oven, and bake for 25 minutes. Yield: 8 servings.
