Yield: 12 cakes
Ingredients:

Favorite dark chocolate recipe or box dark chocolate cake mix, baked in muffin tins

Cherry filling:
-
1 can pitted tart cherries
-
3/4 cup sugar
-
1/2 cup water
-
Let simmer until thickened
-
Brandied cherry sauce
-
1 can sweet cherries
-
3/4 cup sugar
-
1 cinnamon stick
-
6 tablespoons brandy
-
1 1/2 tablespoon cornstarch
-
2 tablespoons cold
Directions:
1. Simmer cherries, sugar and cinnamon simmer for 30 minutes. Add brandy.
2. In a separate bowl, make a slurry with cornstarch and water. Whisk into cherry mixture. Cook for one to two minutes.
3. To assemble: Scoop a bit of cake out of center of cakes; discard or save for snacking. Fill with cherry filling and top with cherry sauce.
