Buttermilk Bread

Yield: 1 loaf of very good bread
Ingredients:

1 tablespoon active dry yeast
-
1 tablespoon sugar
-
½ cup warm water
-
4 cups unbleached flour
-
2 teaspoons salt
-
¼ cup melted butter
-
1 to 1 ½ cups buttermilk
-
Directions:
1. Combine yeast, sugar, and water.
2. Allow to sit until foamy.
3. Mix remaining ingredients, then add yeast mixture and beat well.
4. Remove to a floured board and knead for 10 minutes, adding more flour, if necessary.
5. Place dough in a greased bowl, cover with a warm, wet, wrung-out cloth, and let sit in a draft-free place to rise until double in bulk, at least 1 hour.
6. Punch down, form into a loaf, and place in a greased baking pan.
7. Let rise again until doubled, then bake in a center of a preheated 350 degree oven for 1 hour.
